Chemex Classic Series Coffeemaker

The Chemex has become a cult classic in coffee for a number of good reasons; namely, it tends to leave people wondering how such a simple vessel creates such nuanced flavors. Surely there is magic involved; and yet, with practice and patience all your favorite flavors can be recreated and shared with consistency.

First created in a chemistry lab back in 1941, this inventive design is a culmination of studied methods and tested concepts arranged to chemically produce the best flavors possible in coffee. The Chemex Special Filter works to absorb all excess oils, leaving behind a clean coffee stream brimming with all the aromatic subtleties that are so often lost in standard brewing. Setup & First Use

The Chemex Classic requires no assembly beyond a quick rinse. Before first use, wash the glass body with warm water and a small amount of mild dish soap using a bottle brush. Rinse thoroughly. Do not immerse the wooden collar in water — wipe the collar with a damp cloth only. Dry thoroughly.

The Classic Series is available in 3-cup (15oz), 6-cup (30oz), 8-cup (40oz), and 10-cup (50oz) sizes. The button on the glass marks the halfway point of the brewer's capacity; the bottom of the wooden collar indicates the full capacity. Chemex cup measurements are based on 5oz cups, which is smaller than a standard coffee mug.

Filters: Use Chemex Bonded filters FP-1, FC-100, FS-100, or FSU-100 — available at seattlecoffeegear.com. These are thicker than standard paper filters and are specifically engineered for the Chemex brewing system. The thicker paper removes oils, sediment, and bitter elements, producing a clean, bright cup. Open the filter into a cone shape with three layers facing the pouring spout side. The three-layer side must face the spout — this prevents the filter from collapsing into the air channel during brewing.

Water: Use cold, filtered or spring water. Avoid distilled or RO water — some mineral content improves coffee flavor. Bring water to approximately 200°F (just off boil, or let boiling water rest 30–45 seconds before pouring).

Chemex Brewing Method — Step by Step

Step 1: Grind. Grind your coffee to a medium-coarse consistency — slightly coarser than drip, finer than French press. The Chemex filter is thick and requires a slightly coarser grind than typical pour-over methods to avoid over-extraction and slow flow.

Step 2: Place the filter. Open the Chemex Bonded filter into a cone with three layers facing the pouring spout side. Set it firmly in the top of the brewer.

Step 3: Dose. Use 1 rounded tablespoon of ground coffee per 5oz cup. For stronger coffee, use more — the Chemex method removes bitterness and acidity, so strong Chemex coffee is clean and smooth rather than harsh.

Step 4: Bloom. Bring water to approximately 200°F. Pour just enough water over the grounds in a circular motion to wet them without floating the coffee — roughly twice the weight of coffee in water. Wait 30 seconds. This bloom allows CO₂ to release from the grounds (fresh coffee blooms more vigorously), which improves extraction evenness.

Step 5: First pour. After blooming, slowly pour more water over the grounds in a circular motion. Keep the water level well below the top of the brewer — at least a quarter inch below the rim. Avoid pouring directly onto the filter paper sides.

Step 6: Continue pouring. Add the remaining water in a steady, controlled stream using circular or back-and-forth motions. Maintain a consistent water level in the filter. Total brew time for a 6-cup batch is approximately 4–5 minutes.

Step 7: Remove filter. Once all the water has dripped through, lift the filter with spent grounds and discard. Chemex Bonded filters are biodegradable and compostable.

Measuring Brew Volume

The Chemex has two built-in level guides: the glass button marks the halfway point of the brewer's capacity; the bottom of the wooden collar indicates full capacity. A 6-cup Classic holds 30oz (full) or 15oz (half). Use these guides to measure brew volume without needing a separate container.

Coffee-to-Water Ratio

The standard Chemex ratio is 1 rounded tablespoon per 5oz cup. For a 6-cup (30oz) batch, use 6 rounded tablespoons (approximately 42g). Adjust to taste — the Chemex is forgiving because the thick filter prevents over-extraction bitterness. Grind coarser for faster flow; finer for a slower, more concentrated brew.

Rinsing the Filter (Optional)

Some brewers pre-rinse the filter with hot water before adding grounds to remove any residual paper taste and to pre-heat the glass. Pour the rinse water out of the brewer before adding coffee. This step is optional but can improve cup clarity.

Cleaning & Maintenance

After Each Use

Lift the filter with spent grounds and discard. Rinse the glass brewer thoroughly with hot water. The Chemex can be hand-washed with a bottle brush and mild dish soap — avoid abrasive sponges that can scratch the glass. Rinse well to remove all soap residue.

Wooden Collar

The polished wood collar with rawhide tie is not dishwasher safe and should not be soaked in water. To clean, wipe with a barely damp cloth. If the collar becomes stained, a dry microfiber cloth typically polishes it clean. Remove the collar before washing the glass.

Dishwasher

The glass body is dishwasher safe once the wooden collar and rawhide tie are removed. Place the glass securely in the dishwasher — ensure it isn't bumping against other items to avoid breakage. The collar and rawhide must be cleaned by hand only.

Deep Clean

For mineral scale or coffee oil buildup, fill the Chemex with equal parts water and white vinegar, let soak for 15–30 minutes, then rinse thoroughly. Alternatively, use a commercial coffee brewer cleaner. A long-handled bottle brush is the most effective tool for cleaning the narrow neck of larger Chemex sizes.

Storage

Store the Chemex on its base, right-side up. Do not microwave the Chemex — none of the Chemex coffeemaker materials are microwave-safe. Coffee brewed in the Chemex can be refrigerated in the glass body and reheated gently on a stovetop over very low heat, but microwave reheating is not recommended.

Troubleshooting

Flow Too Slow / Brew Taking Too Long

Grind is too fine — adjust to a coarser grind. The Chemex filter is thicker than standard pour-over filters and requires a coarser grind than most. A 6-cup batch should take approximately 4–5 minutes. If it exceeds 7–8 minutes, grind coarser.

Flow Too Fast / Coffee Tastes Weak

Grind is too coarse or not enough coffee is dosed. Move to a slightly finer grind or increase the dose. Ensure you are using Chemex Bonded filters — standard paper filters are thinner and flow faster, changing the extraction profile.

Filter Collapsing or Falling

The three-layer side of the filter must face the pouring spout to allow airflow. If the filter collapses into the spout, the air channel is blocked and flow will stop. Re-position the filter so the thick side faces the spout.

Coffee Tastes Bitter or Sour

Bitter: grind is too fine, water too hot, or brew time too long. Adjust coarser and check water temperature (target 200°F). Sour/underdeveloped: grind is too coarse, water too cool, or under-dosed. Adjust finer and check water temperature.

Glass Feels Unstable or Tips

Ensure the Chemex is placed on a flat, level surface. The glass body is bottom-heavy when filled and stable when properly positioned. For smaller Chemex sizes (3-cup), the glass has a narrower base — place on a flat surface clear of the counter edge.
